In our kitchen, there's a smart scale with a camera from KITRO – located right by the dishwashing station. It automatically measures what is being thrown away and how much. This helps us identify where food waste occurs and take targeted action against it.

Thanks to KITRO, we plan more efficiently, train more effectively, and act more sustainably. Because reducing food waste is possible – if you pay attention.

Our chilled, filtered Agua Bolero stands for quality and environmental awareness. By choosing our house-filtered water, you’re actively contributing to the protection of our planet. At BOLERO Restaurante, we serve Spanish delicacies with a sustainable twist. The majority of our ingredients come from Switzerland or directly from the Lucerne region. Only selected specialities such as Spanish ham or seafood are imported to offer you an authentic taste experience. Our selection of organic wines, mainly from Spain, brings the flavour of the Iberian Peninsula to your glass – in a responsible way.

-Renewable heating and cooling through heat recovery from the wastewater of Hirschmattstrasse
-100% green electricity from EWL to improve our COâ‚‚ footprint
-Energy-efficient lighting with 100% LED throughout the hotel and restaurant areas
-Prevention of food waste through targeted monitoring and responsible kitchen management

Environmental responsibility is our commitment. We offer four charging stations for electric vehicles, and our hotel’s own electric shuttle ensures emission-free mobility in Lucerne.
